Pumpkin Walnut Butter

Let’s kick off this blogging drought with a bang! I love to experiment in the kitchen. I have had plenty of personal issues with anxiety and depression the last few weeks. But, nothing gets me back in the mood than to walk in my kitchen, and you guessed it…MAKE STUFF UP! Woo! I am beyond excited to share this with you guys.

Here’s what you’ll need for this unique nut butter:

  • 1 2/3 cup Walnuts
  • 1/3 cup Organic Pumpkin Puree (I used Simple Truth brand from Kroger.)
  • 25 pitted dates, softened in cool water for a minimum 30 minutes, up to an hour.
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Ginger
  • 1/2 Teaspoon Nutmeg
  • 1/4 Teaspoon All Spice
  • 1/8 Teaspoon Cloves
  • 1/8 Teaspoon Salt

You will need a very good blender that you know can make a nut paste.

Put the walnuts in the blender and blitz it until it starts forming a paste. Add the pumpkin puree and spices. Taste it to make sure it has enough salt. The salt really helped balance the sweet flavor.

The dates that I purchased happened to be quite hard and dry. If you let them soften in water, they will mix better into the butter. If you need a little more power, you may move the butter into the food processor. You will need to stop the blender and move it down with a spatula or spoon. Feel free to stick a spoon (or an impeccably clean finger) in the bowl (with the blender off…I hate I have to parentheses this but…It’s the world we live in) and give it a try. Adjust to your taste. I often realize that my taste buds are so much more sensitive after being paleo, that I do not need to use a ton of seasonings and spices.

Slap this on some gluten free bread, waffle, or pancake. I have a 3 out of 3 kiddo approval. I’m munching on some on gluten free bread right now, and it’s like a easily eaten pumpkin pie. I could do cartwheels in my kitchen over this! I’m even considering making this for my family for a Christmas treat!
